There's no recipe book for American Oak and Islay Peated Casks 1794 Edition - only a commitment to doing things properly, on our own ground. Every stage of this whisky's life, from seed to bottle, happens here at Arbikie. The rye in the field, the water beneath our farm, the casks in our warehouse - each one leaves its mark, and none of it could be replicated by spirit bought in from elsewhere.
Rye hasn't played a serious role in Scotch whisky since the late 1800s, and reviving it is no small undertaking. Growing it successfully on our own estate, then carrying it through distilling, maturation and bottling without ever leaving the farm, asks for patience measured in seasons, not batches. There are no shortcuts here, and nothing arrives from outside to meet a deadline.
The casks are where this whisky finds its edge, and that responsibility sits with our Cask Manager, Cristian. His job is to read how the rye's natural character will respond to the smoke and salt carried over from casks that once held peated Islay whisky. It's slow, deliberate work - tasting, adjusting, tasting again - cask by cask, until the balance is right. There's no template he follows twice; each batch earns its own flavour dimension alongside the depth of our Original 1794.
At 48% ABV, bottled as a single grain, this whisky carries nothing that wasn't grown, distilled, matured and bottled right here at Arbikie. We won't water that story down - not with spirit from elsewhere, and not by cutting the strength to stretch further.
